I remember a time when potatoes were thought to be fattening. But turns out they actually help you lose weight, especially when eaten cold. The contain a special kind of Resistant Starch - RS. It is called resistant, because it is very slow to be absorbed, so it makes you feel full longer and all that starch is eliminated for most part, leaving no fat in its wake. Aside from being a fat-free food (boiled or baked, not fried, of course!) potatoes are also high in fiber, vitamins C, B1, B6 and potassium.
Other foods rich in RS are: not-quite-ripe, slightly green bananas, yams, brown rice, lentils, corn and beans. Noodles, apparently, can be converted to high RS if you let them sit and get cold and clammy. (I guess that justifies calling macaroni salad a salad - I used to wonder how it was a salad...)
Tomatoes, whether raw, cooked, or in a form of a tomato sauce are excellent for losing weight and staying young and healthy. They contain vitamin C, vitamin A, B1, B2, B6, vitamin E, and vitamin K. They are also a good source of molybdenum, potassium, manganese, dietary fiber, chromium, folate, copper, niacin, magnesium, iron, pantothenic acid, phosphorus, and protein. They help prevent cancer, they are great anti-oxidants, and lower bad cholesterol. For maximum benefits it is recommended to drink a glass of tomato juice (without any additives, preferably freshly squeezed) in the morning or eat two to three ripe tomatoes before noon daily.
